I have used ONLY Chicago Cutlery for years, at least 30 years, and have NEVER been disappointed. This paring knife is SO sharp I really have to be careful when using it. The blade is thin and really makes peeling apples a breeze. My friend is learning to cook and I let him use it. He's a nut about having sharp knives and he was really impressed with this one right out of the package. I secretly ordered one for him for his Christmas stocking. He'll love it, too!
